100% Whole Rye Bread
Our 100% whole rye sourdough bread is a classic dark rye loaf: rich, hearty and full of character. It’s made solely from whole rye flour, water, rye sourdough (Lievito Madre) and salt – nothing more is needed for a truly honest loaf.
Part of the rye comes directly from local farmers. We receive it as whole grain and mill it fresh on our stone mill in the bakery, preserving all the nutrients and the full, natural flavour of the grain.
Thanks to the slow and extended fermentation with our mild rye Lievito Madre, this bread develops a pleasant, rounded acidity that perfectly balances the deep rye aroma. Its dense, moist crumb and aromatic crust make it naturally long-lasting and wonderfully flavourful.
